  • Cocoa Powder: 30g (approximately 1/4 cup)
  • Rice Flour: 15g (approximately 2 tablespoons)
  • All Spice Powder: 1/2 tsp
  • Coconut Flour: 15g (approximately 2 tablespoons)
  • Salt: 1 pinch
  • Chocolate Chips: 90g (approximately 1/2 cup)

Method:

  1. Line a baking sheet with parchment paper.
  2. In a bowl, melt (microwave) the dark chocolate and butter together @ 20 secs.
  3. Now mix using a spatula until the mixture is smooth and glossy. Leave it aside.
  4. In another bowl, sift the powdered sugar and add the eggs.
  5. Use an electric beater to whisk on high speed for 5 to 6 minutes until the mixture becomes pale and fluffy.
  6. Pour the melted dark chocolate and butter mixture into the powdered sugar and egg mixture.
  7. Whisk on low speed for 2 minutes.
  8. Sift in cocoa powder, rice flour and allspice powder. Add the coconut flour and salt.
  9. Use the beater on low speed for 1 minute to achieve a smooth, glossy batter. It will be somewhat runny.
  10. Add the chocolate chips and gently mix using the spatula until they are evenly distributed.
  11. Cover the bowl and refrigerate for 8 minutes to allow the mixture to set.
  12. Preheat the oven to 180°C (350°F).
  13. Scoop the cookie batter into a piping bag and pipe round shapes onto the prepared baking sheet.
  14. Pipe only 4 small round shapes because they tend to flatten and spread out.
  15. Allow the cookies to cool on the baking sheet for 15 minutes.
  16. Then carefully transfer them to a wire rack to cool completely.
