  • Butter: 110gms (1/2 cup)
  • Onion (Chopped): 50gms (1/4 cup)
  • Red Bell Pepper (Chopped): 50gms (1/4 cup)
  • Pink Salt: To Taste
  • White Rice Flour: 10gms (1 tablespoon)
  • Cornflour: 10gms (1 tablespoon)
  • Xanthan Gum: 1 tsp
  • Milk: 170gms (3/4 cup)
  • Parmesan Cheese (Grated): 130gms (1/2 cup + 2 tablespoons)
  • Gluten-free Panko Breadcrumbs/ Saltine Crackers: 70gms (1/4 cup + 2 tablespoons)
  • Frozen Corn (Defrosted & Drained): 500gms (2 cups)
  • Red Chilli Flakes/ Paprika: To taste
  • Eggs (Beaten): 2

Please note that the cup measurements are approximate and can vary based on how ingredients are packed into the cups. Weights (in grams) are often more precise for baking.


  1. In a saucepan, melt 60gms of butter, sauté onions and red bell peppers until tender.
  2. Sprinkle Pink Salt, stir in White Rice Flour, Cornflour, and Xanthan Gum. Cook for few minutes.
  3. Pour in milk, let it thicken. continue stirring until the mixture is thick and bubbly.
  4. Switch off the heat and add in 100gms of Parmesan cheese.
  5. Cool the sauce for 30 minutes.
  6. In a bowl, prepare a topping by mixing 50gms Panko breadcrumbs, 50gms melted butter, and 30gms Parmesan cheese.
  7. Preheat oven to 180C/ 350F.
  8. In a bowl, mix Frozen Corn with the cheese blend, add Chilli flakes, beaten eggs, and gluten-free Panko breadcrumb topping.
  9. Grease a 9” x 5” baking dish, pour in the mix, level it up and sprinkle more breadcrumbs (2 tbsp), cherry tomatoes, and paprika.
  10. Bake at 180C/ 350F for 45 mins until golden. A delightful dish ready to be savoured.
