Gluten-free Chicken Stew

Ingredients:

Oil: 1 tbsp

Spices: Green Cardamom – 5; Cinnamon Sticks (1”) -2; Cloves – 4; Black Pepper – ½ tsp

Ginger (Thin sliced): 5gms

Garlic Cloves (Crushed): 10gms

Onion (Sliced): 50gms

Carrot (Long sliced): 100gms

Beans: (Long sliced): 50gms

Chicken: 250gms

Water: 2 ½ cups

Fresh Lemon Juice: ½ tsp

White Rice Flour: 1 tsp

Pink Salt: 1 tsp

Black Pepper Powder: ½ tsp

Green Chilli (Sliced): 1

Butter: 20gms

Coriander leaves / Celery: For Garnish

Method:

  1. Heat oil in a pressure cooker over low heat.
  2. Mildly crush the spices – Green Cardamom; Cinnamon Sticks; Cloves and Black Pepper.
  3. Add to the heated oil. Stir well.
  4. Add ginger and garlic. Stir.
  5. Add onions and sauté until the onions are translucent for a 2 minutes approx.
  6. Add the carrots and beans. Stir and cook for a minute.
  7. By now your kitchen will start smelling amazing!!
  8. Add the chicken and cook for two minutes. Keep stirring at regular intervals.
  9. Pour in water, fresh lemon juice, white rice flour, pink salt and black pepper powder.
  10. Stir well.
  11. Seal the lid of the pressure cooker and cook on low heat for 15 minutes, until the chicken turns tender.
  12. Switch off the heat.
  13. Open the pressure cooker after 30 mins of cooling add a sliced green chilli and butter.
  14. Cook on medium to low heat for 5 mins.
  15. Serve hot and happy cooking!
