  • 1/2 cup (40g) desiccated coconut
  • 1/3 cup (60g) coconut sugar
  • 1/4 cup (60ml) melted coconut oil
  • 1 tbsp flaxseed meal + 3 tbsp water (egg replacer)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder

  1. Preheat your oven to 170°C (340°F). Line a baking tray with parchment paper.

  3. In a mixing bowl, stir together almond flour, desiccated coconut, coconut sugar, and baking powder.
  4. Add the flax mixture, melted coconut oil, and vanilla extract. Mix until a soft dough forms.
