- 1 cup (100g) almond flour
- 1/2 cup (40g) desiccated coconut
- 1/3 cup (60g) coconut sugar
- 1/4 cup (60ml) melted coconut oil
- 1 tbsp flaxseed meal + 3 tbsp water (egg replacer)
- 1 tsp vanilla extract
- 1/2 tsp baking powder
Quick Tip:
Mixing flaxseed meal with water creates a gel-like texture that works just like an egg to bind the dough and add fiber — it’s magic in egg-free baking!
How to Make It:
- Preheat your oven to 170°C (340°F). Line a baking tray with parchment paper.
- In a small bowl, mix flaxseed meal + water. Let it sit for 5 minutes to thicken.
- In a mixing bowl, stir together almond flour, desiccated coconut, coconut sugar, and baking powder.
- Add the flax mixture, melted coconut oil, and vanilla extract. Mix until a soft dough forms.
- Scoop small portions, roll into balls, and gently flatten each one on the baking tray.
- Bake for 12–14 minutes, or until the edges turn golden brown.
- Let them cool on the tray — they firm up as they cool.
Storage Tips:
- Store in an airtight jar at room temperature for up to 5 days.
- For a fresh-from-the-oven taste, warm briefly before serving.
