Ingredients:

Brown Rice Flour: 175gms

Potato Starch: 90gms

Tapioca Flour: 40gms

Baking Powder: 12.5gms

Xanthan Gum: 3gms

Salt: 3gms

Cold Milk: 250gms

Sugar: 50gms

Cold Butter Cubes: 80gms

Room Temperature Eggs: 2

Vanilla Essence: 1 tbsp

Notes:

Method:

  • Line a baking sheet with parchment paper.
  • In a bowl, sift together brown rice flour, potato starch, tapioca flour, baking powder, xanthan gum, and salt.
  • Add cold butter cubes and sugar to the flour mixture. Gently mix with your hands until the texture becomes coarse. Set aside.
  • In a separate bowl, whisk eggs on low speed with an electric mixer for 3 minutes until light and foamy.
  • Add the coarse flour mixture, cold milk, and vanilla essence to the eggs.
  • Gently mix with your hands to form a soft dough.
  • Cover the bowl and let it rest for an hour.
  • Preheat the oven to 180°C (350°F).
  • Lightly knead the dough for 2 minutes, then roll it out on a lightly floured surface into a 1-inch thick round.
  • Use a 2 ½ inch round cookie cutter to cut out scones and place them on the prepared baking sheet. Gather any leftover dough, press it together, and repeat.
  • Bake for 20–25 minutes until golden brown.
  • Serve warm with preserves and clotted cream.

Shelf Life: 5-7 days in the refrigerator: Wrap them tightly in plastic wrap or aluminum foil and store them in the refrigerator. When you’re ready to consume, reheat them for 10 mins in the oven. Do NOT microwave!! For the best experience, enjoy them fresh.
