Ingredients:

Homemade Applesauce: 160gms

Flax Seed Powder: 15gms

Water: 6 tbsp

Raw Banana Flour: 160gms

Baking Soda: 1 tsp

Salt: ¼ tsp

Oil: 70gms

Nescafe Coffee Powder: 1 tbsp

Brown Sugar: 110gms

Vinegar: 1 tsp

Walnuts Chopped: 50gms

Chocochips: 30gms

Method:

1.Homemade Applesauce Recipe:

Combine 150gms chopped apples (skin removed) and 1 cup water in a saucepan. Cook until tender, then mash with a fork. (Measure the quantity needed for the recipe above, before use)

2. Mix flaxseed powder with water and set aside for 10 minutes to thicken (flaxseed gel).

3. Prepare an 8×4” loaf pan by greasing it and lining it with parchment paper, ensuring the paper overhangs the sides for easy removal later. Set it aside.

4. In a bowl, sift together – Raw Banana Flour, Baking soda & Salt.

5. In a separate bowl, add – Homemade Applesauce (room temperature), Flaxseed gel, Oil, Nescafe coffee powder, Brown sugar and Vinegar.

6. Now whisk well using a hand beater for 2 minutes on low speed.

7. Add the sifted dry ingredients and chopped walnuts to the wet mixture.

8. Now use a spatula to gently combine all the ingredients, using the cut and fold method, until just mixed, for a min approx.

9. Cover the batter and let it rest for 10 minutes.

10. Preheat the oven to 180 degrees Celsius.

11. Transfer the batter into the prepared loaf pan and place whole walnuts and also sprinkle chocolate chips on top.

 12. Bake in the center rack of the oven for 55-60 minutes or until a toothpick inserted into the center of the cake (avoiding the walnuts and chocolate chips) comes out clean.

13.Allow the loaf to cool in the pan on a wire rack for 30 minutes.

14. Then, use the parchment paper overhang to carefully lift the bread from the pan and let it cool on the wire rack for an additional 60 minutes, covering it with a cloth napkin.

15.You’ve just created a rich and decadent batch of Fudgy, Gluten-free, Grain-free, Vegan Brownies! The velvety texture and deep, coffee-infused flavor make them a delightful indulgence.
